A few weeks ago I got goose bumps. A reader, fan and fellow foodie blogger left a comment on my blog. Based all the way in Kakuma, Kenya at the Kakuma refugee camp where she works, Wangeci of the Foodie in the Desert fame made my coconut rice recipe. I was so pumped that she had not only cooked this dish, but innovated. She didn’t have dried crayfish where she was, so she used fish sauce. Genius! Here’s a big shout out to Wangeci. Keep em’ coming!
